A White-Headed Capuchin… I met Masha & Udi in 2008 when they were touring the Rainforests of the Panama Canal. I climbed in their tour boat & ate fresh fruits from Masha’s hand.  Masha took this up-close picture of me, I didn’t mind at all.  Did you know the Panama Canal Rainforest is one of the most accessible & nature-rich rainforests in the world? It has over 50,000 acres of pristine rainforest, 105 species of mammals, 525 species of birds & 124 reptiles & amphibians.  My job is to help spread seeds and pollen and look cute.  KIDS:  you can help save the rainforests of Todo-el-Mundo (The World) by using recycled products, helping endangered species, and avoiding waste.

Quinoa has been the buzzword, and the “It”  food, both for its healthy properties and as a center of the plate feature in gluten-free diets.

It is not a grain; rather, it is a chenopod, related to beets and spinach.

You’ve probably heard that you should eat whole grains, but try the gluten free grain-like seed called “quinoa” instead of wheat. Quinoa provides more amino acids, enzymes, vitamins, minerals, fiber, antioxidants, and phytonutrients than most other grains!

• Complete protein. Quinoa contains all 9 essential amino acids that are required by the body as building blocks for muscles.

The Atlanta Food Bloggers visited FuegoMundo on Sunday, February 6th and had the opportunity to sample many of the gluten-free options available at the restaurant.  The meal below is based on their votes for the best Gluten-Free Meal available at FuegoMundo.  Enjoy!

Here is the recipe for the FuegoMundo Latin Vegetable Soup. This is a fabulous soup to make on a cold winter’s day.  It has a medley of flavorful and nutritious vegetables that will delight your taste buds.

Sancocho~Vegan and non-fat!

Bring to a boil:

• 8 quarts water
• 1 cup of vegetable stock (make sure your stock is gluten-free if you are concerned about GF)
• 6 Tablespoons Minced Garlic
• 5 Bay leaves
• ½ teaspoon salt
• ¾ teaspoon of pepper
• Juice of 1 lemon

Add and Boil for 20 minutes:

• 2 large white onions (cut into chunks)
• 4 carrots (peeled and cut)
• 2 yellow plantains (peeled and cut)
• 1 bunch of cilantro (chopped)

Add and boil for an additional 30 minutes:

• 1 bunch of broccoli (cut up)
• 2 Yuca roots (peeled, steamed and cut into finger size)

Remove from heat and let cool for 1 hour.
