The Atlanta Food Bloggers visited FuegoMundo on Sunday, February 6th and had the opportunity to sample many of the gluten-free options available at the restaurant.  The meal below is based on their votes for the best Gluten-Free Meal available at FuegoMundo.  Enjoy!

Here is the recipe for the FuegoMundo Latin Vegetable Soup. This is a fabulous soup to make on a cold winter’s day.  It has a medley of flavorful and nutritious vegetables that will delight your taste buds.

Sancocho~Vegan and non-fat!

Bring to a boil:

• 8 quarts water
• 1 cup of vegetable stock (make sure your stock is gluten-free if you are concerned about GF)
• 6 Tablespoons Minced Garlic
• 5 Bay leaves
• ½ teaspoon salt
• ¾ teaspoon of pepper
• Juice of 1 lemon

Add and Boil for 20 minutes:

• 2 large white onions (cut into chunks)
• 4 carrots (peeled and cut)
• 2 yellow plantains (peeled and cut)
• 1 bunch of cilantro (chopped)

Add and boil for an additional 30 minutes:

• 1 bunch of broccoli (cut up)
• 2 Yuca roots (peeled, steamed and cut into finger size)

Remove from heat and let cool for 1 hour.

“Love it Here!  Great ceviche served here. It has a good amount of acid and meaty chunks of fish. Not many places ever get it right. I like the casual feel and the staff are all friendly. They serve great yucca fries with a kick ass garlic yogurt sauce. I dipped everything in that sauce. Gotta try the other dishes next time. Everything was quickly prepared and very fresh. Totally worth another visit….”

Yucca is a healthy root vegetable that has a brown outer skin and white on the inside.  There are properties in the Yucca that can help arthritis and rheumatism due to the plants’ high content of steroid saponins, which are precursors to cortisone, and act as an anti-inflammatory.  Yucca is high in Vitamins C, B & A as well as calcium, phosphorus, potassium and iron.  Diuretics and emetics are commonly made from both the root and leaves of the Yucca. 

Did you know that you can consume the Yucca Root as you would a potato?  Yucca is delicious baked, boiled or fried.  Add it to your favorite soup and substitute it for potatoes for an added health benefit.

Yucca is native to South America, in the Amazon Basin of Brazil.  It was one of the 1^st cultivated plants in the western hemisphere. This tropical root is referred to as cassava, manioc, sweet potato tree & tapioca plant. It’s now widely cultivated in California, Arizona, Nevada, Indonesia, Malaysia, the Philippines & Africa.  Native Americans, Mexicans and Indians have used the Yucca Root for centuries to treat a wide variety of maladies, especially headaches, gonorrhea, arthritis and rheumatism.
